Dish story

Enchiladas are among the oldest and most iconic dishes in Mexican cuisine. Their origins date back to pre-Hispanic times, when corn tortillas were a staple food and were commonly eaten with sauces made from chillies and other native ingredients.

Over the centuries, enchiladas evolved as different regions developed their own variations and cooking styles. Among the most popular are Red Enchiladas, distinguished by their rich sauce made from dried red chillies, which gives the dish its vibrant colour and deep flavour.

Throughout Mexico, enchiladas can be found with a wide variety of fillings and garnishes, but they all share the same foundation: corn tortillas combined with a flavourful chilli sauce that celebrates the essential ingredients of Mexican cuisine.

Today, Red Enchiladas remain one of Mexico's most beloved comfort foods and an enduring symbol of traditional Mexican cooking.

Cutzamala version

At Cutzamala, our Red Enchiladas are prepared with corn tortillas filled and covered with a homemade red sauce crafted in our kitchen following traditional Mexican techniques. The sauce delivers depth, richness and the distinctive character of dried chillies while allowing the other ingredients to shine.

We finish the dish with generous melted cheddar cheese, adding creaminess and an irresistible texture that perfectly complements the bold flavours of the red sauce.

A combination of Mexican tradition and Cutzamala's own identity that has made this dish one of our guests' favourites.
