Since 2014

More than a decade cooking a Mexico rarely found on menus.

Handmade Mexican food in Mercado Antón Martín, Madrid. Regional recipes, fresh ingredients and a way of cooking that respects the time each dish needs.

Cutzamala was born in 2014.

Cutzamala was born with a simple idea: to cook the Mexican food we missed.

We did not want to build another restaurant based only on tacos and burritos. We wanted to show the enormous diversity of Mexican cuisine: regional recipes, moles, stews and dishes that usually do not cross the Atlantic.

Since then, we have kept the same philosophy: product, technique and respect for recipes.

Mercado Antón Martín in Madrid

Our home is Mercado Antón Martín.

We work inside Mercado Antón Martín, in the heart of Madrid.

Every day we share space with fruit sellers, fishmongers, butchers and small food businesses. Cooking inside a market keeps us close to the product and reminds us that good cooking begins long before turning on the stove.

Fresh ingredients at Cutzamala

We cook the way we like to eat.

We roast tomatoes and chiles for our sauces. We cook moles for hours. We prepare marinades, stews and bases from scratch.

We believe Mexican cuisine is one of the great cuisines of the world and deserves to be treated with the same respect as any other traditional cuisine.

Not all of Mexico fits in a taco.

Our menu changes, grows and keeps a living archive of regional dishes, house recipes and Mexican specialties that are hard to find in Madrid.
