Pink Mole
Mexican Pink Mole made with beetroot, habanero chile and spices, served with roasted chicken breast and crispy beetroot and plantain. A rare Mexican mole specialty.
Dish story
Pink Mole (Mole Rosa) is a distinctive Mexican mole from Taxco, Guerrero, known for its striking pink color and complex combination of ingredients. Depending on the recipe, it may include beetroot, chiles, seeds, nuts and spices, creating a flavor profile unlike better-known Mexican moles.
Within Mexico's extraordinarily diverse mole tradition, Pink Mole from Taxco remains a lesser-known regional specialty and is rarely found outside Mexico.
