Dish story

The Torta Ahogada is one of the most iconic dishes of Guadalajara and a true symbol of the cuisine of Jalisco.

Its origins date back to the early twentieth century. According to local tradition, a street vendor filled a birote roll with pork and, either by accident or inspiration, submerged it in a tomato and chilli sauce. The result became so popular that it eventually evolved into one of the region's signature dishes.

The defining element of an authentic Torta Ahogada is the birote salado, a traditional bread from Guadalajara with a firm crust that can absorb the sauce without falling apart. The sandwich is "drowned" in a mild tomato-based sauce, while a separate spicy sauce allows each diner to adjust the heat to their preference.

More than a century later, the Torta Ahogada remains one of the most beloved dishes of Jalisco and an essential part of Mexico's regional culinary heritage.

Cutzamala version

At Cutzamala, we prepare our Torta Ahogada in the spirit of Guadalajara's traditional recipe. We use slow-cooked pork carnitas, tender and full of flavour, served in crusty bread and generously covered with our homemade sauce.

For those seeking the full experience, it is accompanied by a spicy chile de árbol sauce, one of Mexico's most distinctive chillies, known for its clean, vibrant heat and bold character.

The result is a celebration of Jalisco's culinary tradition, combining rich flavours, authentic techniques and one of Mexico's most iconic sandwiches.
