Trompito de Pastor
Trompito de Pastor: marinated al pastor pork and grilled pineapple served on a skewer, with corn tortillas, onion, cilantro and salsa to build your own tacos at the table.
Dish story
Tacos al pastor are one of the most iconic dishes in Mexican cuisine. Their origins can be traced back to Lebanese immigrants who arrived in Mexico during the late nineteenth and early twentieth centuries, bringing with them the technique of cooking meat on a vertical spit.
Over time, this technique merged with Mexican ingredients and flavours. The meat began to be marinated with chillies, spices and achiote, creating the distinctive red colour associated with al pastor. Pineapple was later added, contributing a sweet contrast that became one of the dish's defining characteristics.
Traditionally, the meat is cooked on a rotating vertical spit and sliced directly onto corn tortillas, accompanied by onion, cilantro and salsa. The word trompito literally means “little trompo” and refers to a smaller or individual version inspired by the traditional vertical spit used to cook al pastor.
Today, tacos al pastor are regarded as one of the greatest symbols of Mexican street food and a staple of Mexican gastronomy worldwide.
The term al pastor reflects the connection between Mexico's iconic meat spit and the Middle Eastern shawarma. It is one of the best examples of how an international influence evolved into a true symbol of Mexican cuisine. 🌮🇲🇽🍍
