Carne Asada

Dish story

Carne asada tacos are one of the great classics of Northern Mexican cuisine, particularly in regions such as Sonora, Chihuahua and Baja California.

Their origins are closely linked to the cattle-ranching traditions of these areas, where beef is grilled over wood or charcoal, allowing the natural flavor of the meat to shine. The beef is cooked whole or as steaks, then chopped into bite-sized pieces and served on freshly made corn tortillas.

Traditionally, carne asada tacos are topped with onion, cilantro, salsa, lime, and in some regions, guacamole or beans. More than just a recipe, a carne asada gathering is a social tradition that brings family and friends together around the grill.

Over time, carne asada tacos have become one of the most iconic dishes in Mexican gastronomy, celebrated for their simplicity, bold flavor, and the quality of the beef at the heart of the dish.

Cutzamala version

At Cutzamala, we reinterpret this Northern Mexican classic using premium ribeye sourced from Carnicería Alfredo Muyo, our butcher neighbour inside Mercado Antón Martín. The beef is cooked to order to highlight its natural flavour and tenderness.

We serve it with our homemade salsa macha, crafted with árbol and guajillo chillies, bringing depth, aroma and a balanced heat. It comes with corn tortillas and fresh avocado, allowing guests to build their own tacos at the table, just as is often done throughout Mexico.

A simple and honest dish that celebrates quality ingredients, bold flavours and the joy of sharing food.
