Chilaquiles Mayas

Dish story

Chilaquiles are one of Mexico's most traditional breakfast and lunchtime dishes. Their origins can be traced back to colonial times, although their roots lie in the pre-Hispanic practice of using leftover corn tortillas and combining them with sauces made from local ingredients.

In the Yucatán Peninsula, Mexican cuisine developed a unique identity shaped by Mayan heritage and ingredients such as annatto (achiote), citrus fruits and habanero chillies. Over time, these flavours inspired new interpretations of classic dishes, including chilaquiles.

"Mayan Chilaquiles" are not tied to a single historical recipe but rather represent a modern interpretation that incorporates ingredients closely associated with the culinary traditions of southeastern Mexico.

The result is a dish that brings together two essential elements of Mexican gastronomy: the corn-based tradition of chilaquiles and the vibrant flavours of the Yucatán region.

Cutzamala version

At Cutzamala, we have created our own interpretation of Mayan Chilaquiles. Crispy corn tortilla chips are coated in a house-made sauce prepared with tomato, achiote and habanero chilli, bringing together depth, freshness and the unmistakable flavours of southeastern Mexico.

The dish is topped with slow-cooked cochinita pibil, pickled red onion and fresh avocado, creating a balance of richness, acidity, creaminess and texture.

An exclusive Cutzamala recipe that connects Mexico's corn tradition with some of the most iconic flavours of Yucatán cuisine.

Main ingredients

Achiote comes from the seeds of the Bixa orellana tree, native to tropical America and used since pre-Hispanic times by the Maya and other Mesoamerican cultures. Beyond its distinctive deep red colour, it provides earthy, mildly spiced flavours and a unique aroma that remains a cornerstone of traditional Yucatán cuisine. 🌿🇲🇽
