Chiles en Nogada

Dish story

Chiles en nogada are one of the most iconic dishes in Mexican cuisine and one of the finest expressions of Puebla’s culinary tradition. Their combination of poblano pepper, picadillo filling, walnut sauce and pomegranate creates a complex, festive dish deeply rooted in Mexico’s gastronomic heritage.

Cutzamala version

At Cutzamala, we prepare our own version with poblano peppers filled with a picadillo made from peach, pear, apple and dried fruits. They are served with a creamy walnut and goat cheese sauce, adding richness, balance and a distinctive character while preserving the essence of the traditional dish.

Main ingredients

The poblano pepper is one of the most distinctive ingredients in Mexican cuisine. Its fresh, slightly sweet flavor and mild heat make it ideal for stuffing while allowing it to retain its own character. In chiles en nogada, it forms the base that brings together the richness of the picadillo and the creaminess of the walnut sauce.
