Chipotles con Piloncillo
Home made smoky chipotle sauce with piloncillo: raw cane sugar and lots of spices. Perfect side to any dish!
Dish story
Chipotle is one of the defining ingredients of Mexican cuisine. It is made by slowly smoking fully ripened jalapeño peppers, a traditional process that concentrates their flavour while developing their distinctive smoky aroma. Across Mexico, chipotle is often cooked with vegetables, spices and natural sweeteners such as piloncillo to create sauces that balance heat, sweetness and acidity.
Cutzamala version
At Cutzamala, this sauce is prepared entirely in-house using chipotle chilies, piloncillo, onion and carrot. Slow cooking allows the ingredients to develop into a rich, smoky sauce with gentle sweetness and remarkable depth of flavour.
It is a versatile sauce that complements many of our dishes, enhancing their character while allowing the main ingredients to remain the focus.
Main ingredients
Piloncillo is an unrefined cane sugar widely used in traditional Mexican cooking. Its natural notes of caramel, honey and molasses balance the smoky heat of chipotle, creating a depth of flavour that refined sugar cannot replicate.
