Dish story
Green chorizo is a little-known Mexican specialty that originated in central Mexico, particularly around Toluca. Unlike traditional red chorizo, green chorizo gets its distinctive color and flavor from fresh ingredients such as herbs, green chilies, seeds, and vegetables.
It showcases the incredible diversity of Mexican cuisine, where the same type of sausage can take on completely different identities depending on local traditions and ingredients.
Cutzamala version
We craft our green chorizo entirely by hand using juicy pork marinated with fresh chilies, spinach, pumpkin seeds, and peanuts. After maturing, it is grilled and served with melted cheese, wheat tortillas, and our exclusive RoMEXcu sauce, a unique reinterpretation of Catalonia's romesco sauce made with chipotle chili and fire-roasted tortilla.
A dish that brings together Mexican tradition, artisanal craftsmanship, and a touch of Madrid-inspired creativity.
An exclusive creation of Cutzamala Mex Food in Madrid.
