Croquetas de Cuitlacoche
Cuitlacoche, chile serrano and sweet corn croquette. Soft and full of flavour!
Dish story
Cuitlacoche is one of the most unique ingredients in Mexican gastronomy. Considered a delicacy since pre-Hispanic times, this fungus grows naturally on corn ears and develops deep, earthy and complex flavours.
Across Mexico it is used in quesadillas, soups, tamales and many regional dishes where its distinctive flavour takes centre stage.
Cutzamala version
Our version combines cuitlacoche, serrano chilli and sweet corn in croquettes that are creamy on the inside and golden crispy on the outside. A flavourful bite where the rich character of cuitlacoche is balanced by the natural sweetness of corn.
Main ingredients
Often referred to as the "Mexican truffle", cuitlacoche is a fungus that grows on corn. While it was considered an agricultural disease in many countries, in Mexico it has been prized for centuries for its remarkable flavour and culinary value. Today it remains one of the most iconic ingredients in traditional Mexican cuisine.
