Frijoles con Veneno
Frijoles con Veneno (“Beans with Venom”): refried beans with chorizo, topped with pork rib meat in guajillo and ancho chile adobo and served with flour tortillas for tacos.
Dish story
Frijoles con Veneno (“Beans with Venom”) are a traditional northern Mexican dish particularly associated with Nuevo León, although different regional versions exist. They consist of refried beans enriched with the so-called “veneno”: the flavorful fat, juices and sauce from a pork stew or roast.
Despite the dramatic name, there is no actual poison involved. The “veneno” refers to the rich, fatty part of the pork preparation that is mixed into the beans. Depending on the region and recipe, versions may include chorizo, chicharrón, ancho or guajillo chiles, and are often served with flour tortillas.
Cutzamala version
Our version begins with refried beans cooked with Mexican chorizo, creating a rich and flavorful base. We top them with pork rib meat marinated in guajillo and ancho chiles, slowly cooked until tender and juicy. Served with flour tortillas, it allows guests to build their own tacos and enjoy this traditional Mexican comfort dish in every bite.
