Cutzamala Kimchi

Dish story

Kimchi is one of Korea's most iconic foods and one of the world's best-known fermented dishes. Made with vegetables, garlic, ginger and chili, its natural lactic fermentation creates remarkable depth, acidity and umami. More than a side dish, kimchi has been a cornerstone of Korean culinary culture for centuries.

Cutzamala version

At Cutzamala, we preserve the traditional fermentation process while creating our own interpretation by replacing the classic Korean chili profile with Mexican pasilla and ancho chilies. The result retains the vibrant character of kimchi while introducing sweeter, fruitier and subtly smoky notes typical of Mexican cuisine. As far as we have been able to verify, this is a highly uncommon adaptation and an original Cutzamala creation.

Main ingredients

Pasilla chili offers a completely different flavor profile from traditional Korean chili. It is known for its notes of cocoa, dried fruit and raisins, with a gentle, elegant heat. Combined with ancho chili, it adds depth and complexity without masking the flavors developed during fermentation.
