Dish story

Manchamanteles is a traditional Mexican mole distinguished by its combination of dried chiles, spices and fruit, creating a characteristic balance of sweet, spicy and savory flavors. Different regional and family versions exist, particularly in culinary traditions such as those of Puebla and Oaxaca.

Its unusual name literally means “tablecloth stainer,” referring to the intense reddish color of its sauce. Ingredients may include ancho or guajillo chiles and fruits such as pineapple, plantain or pear, although recipes vary.

This combination of fruit, chiles and spices gives Manchamanteles one of the most distinctive flavor profiles among Mexican moles.
