Dish story

At Cutzamala in Madrid, our quesabirria begins with beef birria that is slowly cooked for hours, following the tradition of Mexico's great slow-cooked stews.

Traditional birria is slowly cooked for hours with chillies, spices and meat, creating a rich and deeply flavourful stew. Over time, taqueros began filling corn tortillas with birria and melted cheese before crisping them on a hot griddle, producing a taco that is crunchy on the outside and succulent on the inside.

The dish quickly spread across Mexico and later throughout the United States, becoming one of the most recognisable Mexican street-food creations in the world. A key part of the experience is dipping each bite into a rich consommé made from the cooking juices of the birria.

Today, quesabirria is celebrated as a modern Mexican classic that honours traditional birria while presenting it in a new and irresistible format.

Cutzamala version

At Cutzamala, our quesabirria begins with birria that is slowly cooked for hours, following the tradition of Mexico's great slow-cooked stews. The meat is carefully shredded and folded into corn tortillas with melted cheese before being grilled until golden and crisp.

Each order is served with its own consommé, prepared from the cooking juices and chilli marinade, allowing guests to dip every bite and enjoy the full depth of flavour.

A perfect balance of tradition, craftsmanship and indulgence that has made quesabirria one of the most celebrated dishes of contemporary Mexican cuisine.
