Tacos Arabes

Dish story

Tacos Árabes originated in Puebla in the early 20th century with the arrival of immigrants from the Middle East. Inspired by dishes such as shawarma, lamb was adapted to local ingredients and tastes through the use of pork, while bread gradually gave way to tortillas. This meeting of two culinary cultures became one of Puebla's signature dishes and is considered a direct predecessor of tacos al pastor.

Cutzamala version

At Cutzamala, we take this meeting between Mexico and the Middle East one step further. Strips of marinated pork are seared on the griddle and served on tortillas with a tahini and habanero sauce. A fresh cucumber salad completes the dish, balancing the richness of the marinade, the creaminess of the tahini and the heat of the habanero.

Main ingredients

Tahini, made from ground sesame seeds, is an essential ingredient in many Middle Eastern cuisines. Its creamy texture and distinctive toasted flavor connect this dish with the Arab roots that gave rise to these tacos. In our version, we combine it with habanero chili, creating a bridge between those origins and one of Mexico's most aromatic and distinctive chilies.
