Tacos de Carnitas

Dish story

Carnitas are one of the most iconic dishes from the Mexican state of Michoacán, particularly from the Tierra Caliente region and the town of Quiroga. Traditionally, pork is slowly cooked in its own fat for hours until it becomes tender, juicy and lightly crisp on the outside.

Originally prepared for family gatherings and celebrations, carnitas have become one of Mexico's most beloved culinary traditions, admired for their simplicity and remarkable depth of flavor.

Cutzamala version

Slowly confit pork, cooked until perfectly tender and flavorful. Served on four corn tortillas and accompanied by our apple and fresh chili salsa, bringing brightness, acidity and a gentle touch of heat.

From Tierra Caliente to Madrid, a traditional Mexican recipe reimagined with the Cutzamala touch.
