Torta Augusto
Sourdough bread for this sandwich filled with Cabeza de jabali, fresh ham and cheddar cheese, with mayonaise, fried beans and our special chipotle with poloncillo recipe. Simply delicious!
Dish story
The Augusto Sandwich is a personal tribute to one of my favourite meals growing up in Cuernavaca. There was a small sandwich stand that served simple yet unforgettable tortas. It was always packed at lunchtime and often sold out quickly. Those sandwiches combined humble Mexican ingredients such as refried beans, chipotle chillies, ham and cheese, proving that great flavour does not require complicated recipes. Years later, that memory inspired us to create our own version at Cutzamala.
Cutzamala version
Our Augusto Sandwich is made with sourdough bread, mayonnaise, refried beans, pork head cold cut, cooked ham and melted yellow cheddar cheese. The element that makes it truly unique is our house-made chipotles cooked with piloncillo, adding sweetness, smokiness, depth and a gentle heat. A recipe that brings together nostalgia, tradition and the unmistakable flavours of Mexican comfort food.
Main ingredients
Chipotle is one of the most iconic ingredients in Mexican cuisine. It is made by slowly smoking ripe jalapeño peppers, developing deep smoky, woody and fruity flavours. At Cutzamala, we cook it with piloncillo to create a balanced combination of sweetness, smokiness and gentle heat that gives this sandwich its distinctive character.
