Wafle de Cochinita Pibil
Rice wafle crowned with cochinita pibil and fried orange and plantains. A delicious own recipe!
Dish story
Cochinita pibil is one of the great dishes of Yucatecan cuisine: pork marinated with achiote and citrus and slowly cooked until tender and deeply flavorful. In this Cutzamala creation, it moves away from its traditional presentation and meets an unexpected base: a waffle made from rice.
Cutzamala version
An original Cutzamala creation that we first made many years ago. We prepare a rice waffle and serve it with our cochinita pibil, fresh orange and plantain browned in butter. The waffle adds texture and absorbs the flavorful juices from the pork, while the orange brings freshness and the plantain adds sweetness and richness. A combination of crisp, juicy, acidic and sweet elements that became one of our most distinctive creations.
Main ingredients
Achiote is inseparable from cochinita pibil and one of the defining ingredients of Yucatecan cuisine. Made from the seeds of the Bixa orellana plant, it provides its characteristic reddish color and an earthy, subtly spiced flavor that, combined with citrus, gives this dish much of its distinctive character.
